Brindis y sabor
This maridaje contains:
Pajarete Quitapenas 3 Years Old Liqueur wine. Aged for 3 years. Malaga Designation of Origin. Grape variety: 90% Pedro Ximénez and 10% Muscat of Alexandria.
Alcohol Content: 17% Vol. 5º Baumé. 110 g/l reducing sugars.
Tasting Notes:
Visual Phase Light amber with orange highlights. Clean and bright. Nose: Aromas of dried fruits (walnuts, hazelnuts) with hints of raisins and caramel. Orange peel, citrus, and fine wood. Taste: Good acidity, balanced. Body and structure.
Milk chocolate bar (70 g) made with milk, ‘Payoya’ goat cheese and fig bread. An artisanal chocolate made in Malaga with natural, high-quality ingredients. The cheese used is organically cured goat cheese ‘Payoya’ de Crestellina, a native breed of the Sierra Crestellina, and the fig bread is a traditional dessert from the area. This combination of flavors creates a unique and delicious chocolate, ideal to enjoy at any time of day.
Pinsapo Cured Goat Cheese (250mg), Agammasur Montes de Malaga cheese factory: aged for 180 to 200 days. Its ivory-yellow paste turns darker depending on the degree of ripeness. The rind has a characteristic aroma of Roquefort and Camembert. Its buttery, smooth, and long-lasting flavor is pronounced from the outside, developed and intense, and slightly spicy. A roasted, nutty aftertaste.
Selected breadsticks (32 g), country-style breadsticks, and regañas with extra virgin olive oil for a very smooth texture.
Dulce encuentro

1670 Dulce PX Organic. Designation of Origin Malaga. Grape variety: 100% Pedro Ximénez.
Alcohol Content: 15% Vol. 8.6º Baumé. 190 g/l reducing sugars.
Tasting Notes:
Visual Phase Dark mahogany. Iodine highlights. Glycerin tear. Olfactory Phase Caramel, toffee, dried figs, dried fruit. Wood. Roasted. Cocoa. Spices. Gustatory Phase Dense, creamy, glycerin, sweet, and silky.
Cured Reserva cheese aged for 5 to 6 months (250 g). Made with raw milk from goats, mostly from the Malaga breed, and matured in Verdial variety extra virgin olive oil from the ‘Montes de Málaga Natural Park’ during its final two months of curing. It has a medium salty and very mild bitterness, with a spicy touch and a long lingering taste.

This pairing contains:
Caminito del Rey Craft Beer. This beer is brewed at the Gaitanejo brewery in a town near Malaga called Ardales. Made with natural ingredients, it’s pale gold in color, smooth, and refreshing. Floral aroma with a slight bitterness. 330 ml. 5.5% alcohol.
Beer Jam: Smooth, surprisingly flavorful beer jam made with American Pale Ale. 160 g.
Semi-cured goat cheese aged for 35 to 60 days (250 g). Ivory-yellow paste, with a characteristic aroma of Roquefort and Camerène. It is buttery on the palate, with a mild, salty, creamy flavor and a medium lingering aftertaste.
